Today we want to prepare them Indian style, with pistachios. We tell you how to make them.

- 150 g plain flour
- 40 g chickpea flour
- 20 g fine semolina
- 70 g powdered sugar
- 1 pinch of salt
- 1 teaspoon cardamom
- 110 g clarified butter
- 10 finely chopped pistachios
- The first step to prepare these cookies is to mix in a bowl, with the help of a spoon, the flours, semolina, sugar, salt and cardamom.
- Then add the clarified butter and mix the dough with your hands for a few seconds.
- Next, cover the baking trays with parchment paper and preheat the oven to 160º C.

. - In the meantime, we take a spoonful of dough and form a ball with our hands. We place it on the tray.
- Repeat this last step leaving a space of about 5 cm between each ball and carefully press with your finger in the center of each of them to distribute a few pistachios in the holes.
- Bake the cookies for 15-20 minutes until lightly browned. Then, remove them from the oven and let them cool on a wire rack to crisp up.
- When they are cold, you can keep them in an airtight container for 3-4 days.
