For really squeeze all the possibilities that an oven offers, and cook almost any recipe that you would also do on a hob, there is a strategy that does not fail: to know in depth each of its functions. NEFF ovens have several types of cooking that, once you have mastered them, open the door to the preparation of truly professional recipes.
Do you want to know them in depth? Below we explain them to you, adding what dish you can prepare with each one of them.
CIRCOTHERM HOT AIR AND TOP/BOTTOM HEAT
These are the two types of heating that you are most likely to use on a daily basis. With CircoTherm, the oven fan is activated to distribute the heat evenly throughout the oven interior, while the second option basically represents the more traditional baking.
What dishes can be prepared with these types of heating? Morsels as sweet as biscuits, croissants, small pastries, a quiche, and even butter pastries.
In addition, this function is perfect for any roast, whether meat, fish or vegetables. It can also be combined with the use of a thermoprobe or steam supply, thus perfectly controlling the optimum roasting point and the optimum humidity point to prevent drying out. In addition, cooking with humidity means that it cooks faster and the oven does not stain.
With the top and bottom heat you can also bake pre-baked bread.
TERMOGRILL
It can reach 250ºC and combines the grill resistance with the fan. Both are switched on and off alternately for incredible results.
Which dishes look best with TermoGrill? It is mainly used for roasting poultry or large pieces of meat such as pork. It is also ideal for gratin and heating, or to finish cooking cannelloni with bechamel sauce and cheese on top, vegetables au gratin, lasagna, eggplant parmesan or crusted meat, among other things.
PIZZA FUNCTION
The name already gives you a very clear clue! It is the heating you need to prepare your pizzas at home, as it uses a high lower heat to make them crispy.
BREAD BAKING PROGRAM
As in the previous case, there is no room for doubt. It is perfect for baking bread that you can make yourself, as well as smaller rolls (or even some small pastries). All these proposals have one thing in common: they require very high temperatures.
GRILL (LARGE OR SMALL SURFACE)
I’m sure you already know that the grill is perfect if you want to grill! But it is also the most suitable type of heating for grilling flat pieces of meat (wide grill), or small quantities of steaks, sausages or even toast (reduced grill).
OTHER TYPES OF HEATING THAT CAN BE VERY USEFUL
→ Bottom heat: Only the bottom heating element is heated, so you can use it if you need to cook in a bain-marie.
→ Slow cooking:
It is a low temperature heating that slowly cooks pieces of meat, usingadditionally an open vessel.
→ Fermenting:
For leavening yeast doughs, sourdough and for fermenting yogurt. It is much faster than doing it at room temperature.
→ Vacuum cooking:
Uses fairly low temperatures (50-95ºC) and.
100% vapo
r
to vacuum pack (using special bags) meat, fish, vegetables or desserts. With this function we can also prepare eggs at low temperature. We only have to preheat the oven in this function programmed at 63ºC and once hot put the fresh eggs in the perforated tray for 35 minutes. Then, remove and crack with a normal egg on the plate. The result is a perfect poached egg. Also, it doesn’t matter how many we make at a time since they will all come out the same.
→ Regenerate:
This is the type of heating you need to reheat dishes that you had previously prepared with a lot of care, preventing them from drying out. They will look freshly made!
AND WHAT DO ECO PROGRAMS MEAN?
NEFF ovens also feature two slightly more special types of heating: “CircoTherm eco” and “Upper/lower heat eco”. In addition to saving energy, they are used to prepare meat, fish or pastries, but the oven itself automatically regulates the amount of energy needed at any given moment. It is
is the closest thing to ‘slow cooking’, as the food is cooked
It is the most similar to ‘slow cooking’, since the food is cooked in phases using residual heat to make it much juicier and less toasted.
Now you know all the functions of a NEFF oven!
