- 2 cod loins
- 2 sweet potatoes
- 1 lemon
- 3 tablespoons dill
- 30 g butter
- olive oil
- Salt flakes and fresh pepper
- Fresh fennel
- fennel seeds
- 1 tablespoon of honey
- 4 tablespoons soy sauce
- 1 head of garlic
- ½ teaspoon of 4 spices (optional)
- To start with the recipe
preheat the oven to 180°C
and bake the sweet potatoes for 45 minutes. - Let them cool and then peel them.
- Mix them with a little olive oil, salt and pepper and a drizzle of honey. If you have any 4-spice blend available, add ½ teaspoon. Then we grind them into a puree.
- Next, cut the fennel into very thin slices and place in a frying pan with a little hot olive oil. Then add some fennel seeds, crushed garlic and pepper.
- Cook for 5 minutes and add 4 tablespoons of salted soy sauce and 1 tablespoon of honey and continue cooking until the fennel is soft.
- Heat the butter with the fennel seeds in a frying pan, add a couple of tablespoons of olive oil and add the cod fillets.
- Next, grate some lemon peel over the cod, add the chopped dill and drizzle the melted butter sauce evenly over the cod during the 10 minutes it is frying.
- Season to taste and serve with the mashed potatoes and sautéed fennel.
