BEEF TENDERLOIN WITH CHOCOLATE CRISP

- 4 beef tenderloins
- 1 tablespoon pork fat
- Salt and freshly ground black pepper
- 100 g soft butter
- 2 tablespoons shelled cocoa beans, ground
- 1 slice of toasted bread cut in cubes
- 3 tablespoons finely chopped flat parsley
- ½ – 1 clove of garlic, finely chopped
- ½ – 1 chili bell pepper, finely chopped
- A pinch of orange zest
- 1 tablespoon maple syrup
- To start with our recipe we must take the tenderloin out of the refrigerator

and let it rest for an hour before cooking. - Heat the pork fat in a frying pan and brown the tenderloin for two minutes on each side.
- We preheat the

at 220° C using the broiler function. - Then, remove the tenderloins from the pan, season with salt and pepper and place them in an ovenproof dish.
- In the meantime, mix all the ingredients for the chocolate coating and season with salt and pepper.
- Next, spread the mixture evenly over the tenderloins, pressing lightly on the surface.
- Then, we put them in the oven on the upper rack and let them cook for about 8 minutes. If the piece is large, it will need a little more cooking.
